The non-dairy summer dessert drink of your dreams, courtesy of Dr. Lana Butner, a board certified naturopathic doctor, nutritionist and founder of Dr. Lana Wellness in NYC. “The strawberries in this drink make it a rich source of Vitamin C, and it also has a nice healthy source of fat from the coconut milk,” she says. Plus, it’s delicious!
Ingredients:
- 1 cup of fresh strawberries
- ½ cup of the non-dairy milk
- 3 to 6 frozen coconut milk ice cubes, depending on how cold you like it
- Squeeze of lemon juice
- 1 tsp. of maple syrup
- 1 can of full fat coconut milk
Instructions:
- Take one can of full fat coconut milk and pour into an ice cube tray.
- Once all spaces are filled, put the tray in the freezer for 6 hours.
- In a blender, combine strawberries and non-dairy milk of choice.
- Add in a squeeze of lemon juice and 1 tsp. of maple syrup.
- Blend until mixed together.
- Add in the frozen coconut milk ice cubes.
- Blend until well-mixed for a refreshing strawberry mocktail!
